A rich Pakistani slow-cooked stew with tender beef, complex spices, and silky sauce, served with traditional naan bread.

Ingredients
- 1200 g Beef for braising
- 4 piece Yellow onions
- 8 clove Garlic
- 40 g Fresh ginger
- 3 piece Tomatoes
- 200 ml Plain yogurt
- 3 tbsp Nihari powder
- 15 g Fresh coriander
- 10 g Fresh mint
- 1 tsp Turmeric
- 0.5 tsp Cayenne
- 4 tbsp Ghee
- 1 l Beef broth
- 1.5 tsp Salt
Instructions
Step 1
Brown 2 sliced onions in ghee until crispy, then set aside.
Step 2
In the same ghee, brown the beef pieces.
Step 3
Add the remaining chopped onions, minced garlic and ginger, and sauté for 5 minutes.
Step 4
Add the tomato purée, nihari powder, turmeric, and cayenne, and stir well.
Step 5
Gradually stir in the yogurt, then pour in the broth.
Step 6
Cover and simmer for 70 minutes until the beef is completely tender.
Step 7
Garnish with the fried onions, fresh coriander, and fresh mint.
