Slow-simmered lamb stew in a rich, aromatic spice sauce. This iconic Pakistani dish is beloved especially at breakfast.

Ingredients
- 800 g lamb stew meat
- 3 piece red onion
- 4 clove garlic
- 3 cm fresh ginger
- 200 g tomato
- 150 ml plain yogurt
- 3 piece dried red chili
- 1 tsp cumin
- 1 tsp ground coriander
- 3 piece cloves
- 1 piece cinnamon
- 2 piece bay leaf
- 4 tbsp ghee
- 300 g basmati rice
Instructions
Step 1
Brown the onions in hot ghee until caramelized, about 15 minutes.
Step 2
Remove the browned onions and sear the lamb for a few minutes on each side.
Step 3
Add the ginger, garlic, and chilis, cook for 2 minutes.
Step 4
Add the tomatoes, yogurt, all spices, and 500ml water.
Step 5
Cover and simmer on low heat for 90 minutes until the meat is tender.
Step 6
Cook the basmati rice separately and serve the nihari topped with the browned onions.
