Buffalo Wings
Crispy wings coated with a spicy sauce made from hot sauce and butter. Served with ranch sauce for dipping.
Ingredients
- 1.2 kg turkey wings
- 200 ml hot sauce (Frank's type)
- 80 g butter
- 1 tbsp white vinegar
- 1 tsp garlic powder
- 1 tsp paprika
- 2 l neutral oil
- 3 g salt
- 1 g black pepper
- 200 ml heavy cream
- 10 g aromatic herbs
- 0.5 piece lemon
Instructions
Step 1
Pat the turkey wings dry with paper towels and season with salt and pepper.
Step 2
Heat the oil to 180°C in a deep fryer or large pot.
Step 3
Fry the wings in small batches for 12-15 minutes until golden brown.
Step 4
Drain the wings on paper towels.
Step 5
Gently melt the butter, add the hot sauce, garlic powder and paprika.
Step 6
Mix well and add the white vinegar.
Step 7
Dip the hot wings in the Buffalo sauce and coat thoroughly.
Step 8
Prepare the ranch sauce: mix heavy cream, herbs and lemon juice.
Step 9
Arrange the wings on a platter with ranch sauce on the side for dipping.
