An iconic Senegalese dish combining fish, broken rice, and vegetables in a savory broth. A burst of West African flavors.

Ingredients
- 800 g Fresh white fish
- 400 g Broken rice
- 3 piece Carrots
- 400 g Squash
- 1/2 piece Cabbage
- 2 piece Onions
- 2 piece Tomatoes
- 4 clove Garlic
- 1 piece Fresh chili pepper
- 4 tbsp Peanut oil
- 1 l Fish stock
- au goût piece Salt and pepper
Instructions
Step 1
Clean and gut the fish. Cut into steaks. Prepare all vegetables in chunks.
Step 2
Sauté onions, garlic, and chili pepper in peanut oil for 3 minutes.
Step 3
Add crushed tomatoes and cook for 5 minutes.
Step 4
Add the fish and sear for 3 minutes on each side.
Step 5
Pour in the stock and add carrots and squash. Simmer for 15 minutes.
Step 6
Remove fish and vegetables. Add broken rice and cabbage to the broth. Cook for 15 minutes.
Step 7
Return the fish and vegetables. Season to taste and serve.
