Pastéis de Nata
The iconic Portuguese custard tarts with creamy filling and crispy puff pastry. Dusted with cinnamon and crystallized sugar.
Ingredients
- 320 g Frozen puff pastry
- 200 ml Heavy cream
- 200 ml Whole milk
- 5 piece Egg yolks
- 80 g White sugar
- 1 tbsp Flour
- 1 tsp Ground cinnamon
- 2 tbsp Crystallized sugar
- 1 tsp Vanilla extract
Instructions
Step 1
Prepare the cream: bring the milk and cream to a boil. Whisk the yolks with sugar until pale.
Step 2
Gradually pour the hot milk into the yolks while mixing. Add the flour and vanilla.
Step 3
Return everything to the pot and thicken over low heat while stirring constantly, 8 minutes. Set aside.
Step 4
Cut the puff pastry into strips and place them in a muffin tin to form small cups.
Step 5
Fill each cup with cream up to 2/3. Sprinkle with crystallized sugar and cinnamon.
Step 6
Bake at 200°C for 20-25 minutes until golden brown. Let cool slightly before serving.
