    Pour boiling water over the bulgur in a bowl. Cover and let soak for 15 minutes until fully absorbed.

    Meanwhile, finely chop the parsley and mint. Dice the tomatoes. Slice the red onion very thinly.

    Squeeze the lemons to get 120 ml of juice. Prepare the dressing by mixing lemon juice and olive oil with salt and pepper.
