Cut the chicken into even cubes. Peel the carrots and cut them into thin sticks. Mince the onion finely.

Heat the olive oil in a pan and brown the chicken until golden. Remove and set aside.

In the same pan, sauté the onion for 2 minutes. Add the curry powder and stir well.

Add the carrots, quinoa, and water. Return the chicken. Bring to a boil then simmer for 15 minutes.
