Patatas Bravas
Spanish fried potato croquettes with a spicy tomato and garlic sauce. A flavorful and convivial appetizer.

Ingredients
- 600 g Potato
- 300 g Crushed tomato
- 4 clove Garlic
- 10 g Sweet paprika
- 3 g Espelette pepper
- 60 ml Olive oil
- 400 ml Frying oil
- 20 ml White vinegar
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Cook the potatoes with skin in boiling salted water.
Step 2
Prepare the sauce by sautéing the garlic in olive oil.
Step 3
Add the crushed tomato, paprika, pepper and vinegar, let simmer.
Step 4
Cut the cooked potatoes into cubes.
Step 5
Fry the potato cubes in hot oil until golden.
Step 6
Drain and serve with the hot sauce.
