Feijoada
Brazil's national dish: a hearty stew of black beans, beef, and pork served with white rice and traditional accompaniments.
Ingredients
- 400 g dried black beans
- 300 g beef stew meat
- 250 g pork belly
- 2 piece red onions
- 4 clove garlic
- 2 piece bay leaf
- 300 g white rice
- 1 piece orange
- 3 tbsp sunflower oil
- 1500 ml water
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
Step 1
Rinse the black beans and soak for 2 hours if possible; otherwise use canned beans, drained.
Step 2
Cut the beef and pork into cubes and brown in oil in a large pot.
Step 3
Add the diced onions and garlic, sauté for 3 minutes.
Step 4
Add the beans, water, and bay leaves, bring to a boil.
Step 5
Reduce heat and simmer for 45-50 minutes until the meat is tender.
Step 6
Meanwhile, cook the white rice according to package directions.
Step 7
Season the feijoada with salt and pepper. Squeeze the orange juice over top.
Step 8
Serve over white rice, garnished with orange slices.
