Feijoada
A hearty Brazilian stew made with black beans and pork, traditionally served with rice and colorful accompaniments.

Ingredients
- 500 g black beans
- 600 g pork ribs
- 200 g pork ear
- 3 piece onion
- 5 cloves garlic
- 3 piece tomato
- 1 l beef broth
- 2 leaves bay leaf
- 4 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 300 g white rice
- 2 piece orange
Instructions
Step 1
Rinse the black beans and cook for 10 minutes in boiling water.
Step 2
In a large Dutch oven, brown the pork ribs and pork ear in olive oil with onion and garlic.
Step 3
Add the crushed tomatoes and cook for 5 minutes.
Step 4
Pour in the broth and add the drained beans with bay leaves.
Step 5
Bring to a boil, then cover and simmer for 1 hour 30 minutes until the meat is tender.
Step 6
Season with salt and pepper. Serve with white rice and orange wedges.
