A fresh Lebanese salad with romaine lettuce, tomatoes, cucumber, radishes, and arugula, topped with crunchy toasted pita and a tangy lemon-pomegranate dressing.
Ingredients
- 400 g Romaine lettuce
- 3 piece Tomatoes
- 1 piece Cucumber
- 8 piece Radishes
- 100 g Arugula
- 20 g Fresh mint
- 25 g Fresh parsley
- 2 piece Pita bread
- 3 piece Lemon
- 1 piece Pomegranate
- 2 clove Garlic
- 80 ml Olive oil
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Tear the pita bread into pieces and toast in the oven at 180°C for 8 minutes.
Step 2
Tear the lettuce into bite-sized pieces, and dice the tomatoes and cucumber.
Step 3
Thinly slice the radishes, and finely chop the mint and parsley.
Step 4
Make the dressing: combine lemon juice, olive oil, crushed garlic, salt, and pepper.
Step 5
Toss all the vegetables and herbs together in a large bowl.
Step 6
Pour the dressing over and toss gently.
Step 7
Add the pomegranate seeds and toasted pita just before serving.
Step 8
Sprinkle with sumac and serve immediately.
