A pyramid of ají amarillo-infused mashed potatoes topped with fresh tuna and avocado. An iconic Peruvian dish that's fresh and flavorful.

Ingredients
- 800 g yellow potatoes
- 500 g fresh tuna
- 2 piece avocado
- 3 piece ají amarillo peppers
- 4 piece lemon
- 1 piece white onion
- 4 piece egg
- 80 ml olive oil
- 5 g salt and pepper
Instructions
Step 1
Cook the peeled potatoes for 20 minutes until tender.
Step 2
Cook the eggs for 10 minutes for a soft yolk, then cool.
Step 3
Dry roast the ají amarillo peppers for 2 minutes, then soak for 5 minutes and blend with a bit of water.
Step 4
Mash the cooked potatoes and mix with the pepper paste, olive oil, and lemon juice.
Step 5
Thinly slice the white onion. Mix the tuna with the onion and fresh lemon juice.
Step 6
Slice the avocados. Arrange the causa in a pyramid with the mash, tuna, and avocado.
Step 7
Garnish with halved eggs and serve chilled.
