A beloved South African specialty from Durban: a hollowed-out round loaf filled with a spiced lentil and vegetable curry.

Ingredients
- 4 piece Round whole wheat bread loaves
- 200 g Red lentils
- 2 piece Yellow onions
- 3 clove Garlic
- 1 tbsp Fresh ginger
- 2 piece Carrots
- 200 g Cherry tomatoes
- 2 tbsp Curry powder
- 20 g Fresh cilantro
- 600 ml Vegetable stock
- 2 tbsp Peanut oil
- 1 piece Lime
Instructions
Step 1
Carefully hollow out each bread loaf, keeping a thick shell. Reserve the breadcrumbs.
Step 2
Sauté the onions and garlic in oil. Add the grated ginger and curry powder.
Step 3
Add the diced carrots and cook for 2 minutes.
Step 4
Add the red lentils, cherry tomatoes, and vegetable stock. Bring to a boil.
Step 5
Simmer for 12-15 minutes until the lentils are tender.
Step 6
Stir in the fresh cilantro and lime juice. Season to taste.
Step 7
Generously fill each hollowed bread loaf with the lentil curry. Serve hot.
