Start the white rice in a pot of cold water (allow 15-20 minutes).
Cut the chicken into cubes, finely chop the onion, and slice the carrots into thin batons.

Heat the oil in a large skillet or wok. Sauté the onion and garlic for 2 minutes.

Add the chicken cubes and brown for 5 minutes.
