Tahdig Tahdig
An Iranian specialty featuring a savory blend of yellow lentils and caramelized onions that creates a golden, crispy crust at the bottom of the pot, served with fluffy white rice.
Ingredients
- 200 g Red lentils
- 300 g White basmati rice
- 4 piece Onions
- 3 clove Garlic
- 1 tsp Turmeric
- 1 tsp Cumin
- 1 pinch Cinnamon
- 6 tbsp Olive oil
- 1 l Water
- 2 tsp Salt
- 1 tsp Black pepper
- 2 tbsp Butter
Instructions
Step 1
Rinse the red lentils under cold water.
Step 2
Slice the onions thinly.
Step 3
Fry the onions in 3 tablespoons of olive oil over medium heat until deeply browned and caramelized.
Step 4
Set aside half of the caramelized onions for garnish.
Step 5
Cook the lentils with the remaining half of the onions, garlic, turmeric and cumin in 600ml of water until tender (15 minutes).
Step 6
Boil the basmati rice in the remaining salted water until fully cooked (18 minutes).
Step 7
In a pot, combine the cooked lentils with the cooked rice.
Step 8
Top with the reserved caramelized onions and add butter in small pieces.
Step 9
Cover and let rest 5 minutes off the heat.
Step 10
Serve, highlighting the golden onions on top.
