Soto Ayam (Gado-Gado)
Indonesian yellow soup served with assorted vegetables and fried tofu, aromatic with turmeric and local spices.

Ingredients
- 300 g Firm tofu
- 200 g Broccoli
- 150 g Carrots
- 200 g Chayote squash
- 2 piece Yellow onions
- 4 clove Garlic
- 1 tsp Turmeric
- 0.5 tsp Ground coriander
- 1 l Vegetable broth
- 3 tbsp Peanut sauce
- 2 tbsp Sunflower oil
- 1 tsp Sugar
- 1 piece Fresh lemon
Instructions
Step 1
Cut the tofu into cubes and fry in oil until golden.
Step 2
Mince the onions and garlic, and sauté them in a large pot.
Step 3
Add turmeric and coriander, pour in the broth.
Step 4
Add the cut vegetables and cook for 10 minutes.
Step 5
Stir in peanut sauce, sugar and lemon juice.
Step 6
Ladle the soup into bowls and top with fried tofu.
