Ropa Vieja
Cuban-style braised shredded beef simmered in a spicy tomato sauce with peppers and onions. Traditionally served with white rice and black beans.

Ingredients
- 1000 g Beef (rib)
- 400 g Crushed tomatoes
- 2 piece Red bell peppers
- 2 piece Yellow onions
- 4 clove Garlic
- 500 ml Beef broth
- 150 ml Dry white wine
- 4 cl Olive oil
- 1 tsp Cumin
- 0.5 tsp Cayenne pepper
- 5 g Salt and pepper
Instructions
Step 1
Sear the beef in hot oil on all sides, 6 minutes
Step 2
Remove the beef and sauté the minced onions and garlic
Step 3
Add the sliced peppers and cook 4 minutes
Step 4
Pour in the white wine and reduce for 2 minutes
Step 5
Add the tomatoes, broth, cumin, and cayenne
Step 6
Return the beef and cover, simmer for 80 minutes
Step 7
Remove the beef and shred it with two forks
Step 8
Return the shredded beef to the sauce and mix
