A rich and flavorful Sumatran curry with tender braised beef in a coconut and spice paste.

Ingredients
- 600 g Beef
- 400 ml Coconut milk
- 3 piece Red onion
- 4 clove Garlic
- 3 cm Fresh ginger
- 2 piece Red chili
- 2 tbsp Peanut paste
- 2 cm Fresh galangal
- 3 piece Bay leaf
- 1 tsp Turmeric
Instructions
Step 1
Chop the onions, garlic, ginger, and chili to form a paste.
Step 2
Sauté the paste over medium heat for 3 minutes.
Step 3
Add the beef cut into cubes and sear for 5 minutes.
Step 4
Pour in the coconut milk and add peanut paste, galangal, and spices.
Step 5
Simmer over low heat for 35 minutes until reduced.
