Ratatouille
A Mediterranean vegetable gratin with eggplant, zucchini, peppers and tomatoes sautéed separately then combined, seasoned with Herbes de Provence and topped with cheese.

Ingredients
- 2 piece Eggplant
- 2 piece Zucchini
- 2 piece Red bell peppers
- 4 piece Tomatoes
- 1 piece Onions
- 4 cloves Garlic
- 10 g Herbes de Provence
- 80 g Grated Parmesan
- 60 ml Olive oil
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Cut all vegetables into equal-sized cubes.
Step 2
Sauté onions and garlic in olive oil.
Step 3
Add eggplant and zucchini, cook for 8 minutes.
Step 4
Add peppers and tomatoes, cook for 10 minutes.
Step 5
Season with Herbes de Provence, salt and pepper.
Step 6
Transfer to a baking dish and sprinkle with Parmesan.
Step 7
Bake at 400°F for 10 minutes.
