Traditional Vietnamese beef soup with a rich, aromatic broth, rice noodles, and tender beef. A classic comforting and flavorful dish.

Ingredients
- 400 g Beef (rump roast)
- 1 l Beef broth
- 200 g Rice noodles
- 2 piece Onion
- 30 g Fresh ginger
- 3 piece Star anise
- 1 piece Cinnamon stick
- 20 g Fresh cilantro
- 100 g Bean sprouts
- 30 ml Fish sauce
Instructions
Step 1
Slice the onion thinly and crush the ginger. Toast the star anise and cinnamon stick in a dry pot.
Step 2
Pour the beef broth over the spices. Add the onion and ginger. Bring to a boil.
Step 3
Cook the beef cut into thin slices in the simmering broth for 3-4 minutes until cooked through.
Step 4
Cook the rice noodles according to package directions in a separate pot of water.
Step 5
Divide the cooked noodles among bowls. Pour the broth and meat over top. Garnish with cilantro, bean sprouts, and a splash of fish sauce.
