A spectacular Tunisian dish of rice and vegetables with meat, cooked in a pot and then inverted onto a platter. A flavorful blend of Mediterranean textures and tastes.

Ingredients
- 400 g Beef
- 300 g Long grain rice
- 1 piece Eggplant
- 2 pieces Potato
- 1 piece Red bell pepper
- 1 piece Onion
- 2 pieces Tomato
- 3 clove Garlic
- 5 tbsp Olive oil
- 600 ml Vegetable broth
- 1 tsp Caraway
- au goût Salt and pepper
Instructions
Step 1
Brown the beef in oil, add the onion and garlic, then the tomatoes. Let simmer for 15 minutes.
Step 2
Slice the eggplant and potatoes into thin rounds, sauté them in a pan with the remaining oil.
Step 3
In a pot, alternate layers: fried vegetables, rice, braised meat.
Step 4
Pour in the hot broth and season with caraway, salt and pepper.
Step 5
Cover and cook for 25 minutes over medium heat.
Step 6
Quickly invert the pot onto a serving platter to reveal the golden dome.
