A rich Malaysian soup made with rice noodles, served with shrimp, fish, and a spicy coconut sauce.

Ingredients
- 300 g Peeled shrimp
- 250 g Mackerel fillet
- 200 g Rice noodles
- 400 ml Coconut milk
- 3 piece Red onions
- 4 clove Garlic
- 2 piece Red chilies
- 15 g Fresh ginger
- 10 g Fresh turmeric
- 1 tbsp Shrimp paste
- 800 ml Fish stock
- 4 piece Quail eggs
- 100 g Bean sprouts
- 1 piece Lime
Instructions
Step 1
Cook the rice noodles according to package instructions, drain and set aside.
Step 2
Blend red onions, garlic, chilies, ginger, and turmeric with 100 ml of coconut milk.
Step 3
Heat this paste in a large pot and add the shrimp paste.
Step 4
Pour in the stock and remaining coconut milk, bring to a boil.
Step 5
Add the shrimp and mackerel cut into chunks, cook for 5 minutes.
Step 6
Add the quail eggs, serve in bowls with noodles and bean sprouts.
