Kottu Roti
Chopped bread mixed with vegetables and eggs in a spiced sauce. A popular and delicious street snack from Sri Lanka.

Ingredients
- 3 piece roti or chapati
- 2 piece eggs
- 150 g green cabbage
- 1 piece carrot
- 1 piece red onion
- 1 piece red chili
- 2 clove garlic
- 1 tsp curry powder
- 2 tbsp soy sauce
- 3 tbsp vegetable oil
- 1 piece fresh lemon
Instructions
Step 1
Cut the roti into small squares with scissors or a knife.
Step 2
Finely mince the cabbage, carrot, onion, and chili.
Step 3
Heat the oil in a wok or large skillet and sauté the garlic and onion for 1 minute.
Step 4
Add the vegetables and curry powder, stir-fry for 2 minutes.
Step 5
Add the chopped roti pieces, beaten eggs, and soy sauce, stir vigorously for 3 minutes.
Step 6
Serve hot with a squeeze of fresh lemon juice.
