Traditional Egyptian fava bean puree with garlic, lemon, and olive oil, served as an appetizer with pita bread.

Ingredients
- 800 ml Cooked fava beans
- 4 clove Garlic
- 3 piece Lemon
- 5 tbsp Virgin olive oil
- 1 tsp Cumin
- 0.5 tsp Salt
- 0.25 tsp Cayenne pepper
- 30 g Fresh parsley
- 2 piece Egg
- 4 piece Pita bread
Instructions
Step 1
Drain the cooked fava beans and rinse them.
Step 2
Crush the garlic with salt and add to the fava beans.
Step 3
Pour in the juice of 2 lemons and the olive oil. Mix vigorously.
Step 4
Add the cumin and mix well to achieve a smooth puree.
Step 5
Transfer to a shallow bowl. Make a well in the center and gently crack 2 eggs into it.
Step 6
Drizzle with a splash of olive oil, sprinkle with cayenne and parsley. Serve with pita bread.
Step 7
Optional: cook the eggs soft-boiled for 8 minutes before serving.
