A generous Moroccan salad with romaine lettuce, tomatoes, cucumber, radishes, mint, and crispy roasted pita bread pieces, dressed with a bright lemon vinaigrette.
Ingredients
- 200 g Romaine lettuce
- 3 piece Tomato
- 1 piece Cucumber
- 100 g Radishes
- 0.5 piece Red onion
- 30 g Fresh mint
- 20 g Fresh parsley
- 1 piece Pita bread
- 2 piece Fresh lemon
- 3 tbsp Olive oil
- 1 clove Garlic
- 0.5 tsp Salt
- 0.25 tsp Pepper
Instructions
Step 1
Cut the pita bread into triangles and toast in the oven at 180°C for 3 minutes until crispy.
Step 2
Wash and tear the lettuce. Roughly chop the tomatoes and cucumber. Thinly slice the radishes and red onion.
Step 3
Chop the mint and parsley. Squeeze the lemons to get about 100 ml of juice.
Step 4
Make the vinaigrette: whisk together lemon juice, olive oil, crushed garlic, salt, and pepper.
Step 5
Put lettuce, tomatoes, cucumber, radishes, and onion in a large bowl. Add fresh herbs and pita chips.
Step 6
Pour the vinaigrette just before serving and toss gently.
