A colorful and spiced South African salad made with a variety of vegetables (carrots, peppers, squash), onions, and spices. Served warm, it's a vibrant side dish or appetizer.

Ingredients
- 3 piece Carrots
- 2 piece Red bell pepper
- 1 piece Yellow bell pepper
- 2 piece Onion
- 300 g Butternut squash
- 3 clove Garlic
- 15 g Fresh ginger
- 2 piece Dried red chili
- 1 tsp Turmeric
- 1 tsp Ground coriander
- 1 tsp Cumin
- 60 ml Peanut oil
- 40 ml White vinegar
- 5 g Salt
Instructions
Step 1
Cut the carrots, peppers, onion, and squash into small 0.5 cm cubes.
Step 2
Heat the peanut oil in a large skillet, add the onion and garlic, sauté for 2 minutes.
Step 3
Add the grated ginger and spices (turmeric, coriander, cumin, dried red chili), cook for 1 minute.
Step 4
Add the carrot and squash cubes, cook for 5 minutes while stirring.
Step 5
Pour in the white vinegar, add the peppers, season with salt, and cook for 8 minutes until tender but still crisp.
Step 6
Serve warm or at room temperature.
