Preheat the oven to 200°C.
Cut the cauliflower into small florets and cook in salted boiling water for 8-10 minutes. Drain.

Make a béchamel: melt the butter, add the flour, mix for 1 minute, then gradually pour in the milk while stirring.

Season the béchamel with salt and pepper, and cook for 2 minutes while stirring constantly.
