Pastéis de Nata
Portuguese custard tarts with a crispy puff pastry exterior and creamy vanilla custard filling, dusted with cinnamon sugar. A classic delicacy.
Ingredients
- 320 g Puff pastry
- 200 ml Heavy cream
- 100 ml Milk
- 3 piece Egg yolks
- 60 g Sugar
- 1 tbsp Flour
- 1 tsp Vanilla powder
- 1 tsp Cinnamon
- 2 tbsp Sugar for dusting
- 1 tbsp Butter for pan
Instructions
Step 1
Preheat the oven to 220°C and butter a muffin tin.
Step 2
Unroll the puff pastry, cut into squares, and gently press them into the muffin cups.
Step 3
Heat the milk and cream together until boiling. Whisk egg yolks with sugar until pale, then add flour and vanilla.
Step 4
Slowly pour the hot milk mixture into the egg yolks while whisking. Strain through a fine sieve.
Step 5
Pour the custard into the pastry shells and bake for 15-18 minutes until golden.
Step 6
Remove from the oven, let cool slightly, and dust with a mixture of sugar and cinnamon.
