Pad Siew Sai Moo
Butternut squash stuffed with pork in a Thai soy-honey sauce, infused with garlic and Thai basil.

Ingredients
- 300 g Ground pork
- 400 g Butternut squash
- 4 clove Garlic
- 1 piece Red onion
- 1 piece Fresh red chili
- 15 g Thai basil
- 3 tbsp Soy sauce
- 1 tbsp Fish sauce
- 1 tbsp Honey
- 2 tbsp Peanut oil
- 150 g White rice
Instructions
Step 1
Cook the rice according to package directions. Set aside.
Step 2
Cut the squash into 1 cm cubes.
Step 3
Finely chop the garlic, onion, and chili.
Step 4
Heat the oil in a wok and sauté the garlic and onion for 2 minutes.
Step 5
Add the ground pork and cook for 5 minutes, breaking it apart as it cooks.
Step 6
Add the squash cubes, soy sauce, fish sauce, and honey. Cook for 8 minutes.
Step 7
Add the chili and basil at the end, stir, and serve over rice.
