Cook the red lentils for 12-15 minutes in boiling salted water until tender. Drain.

Sauté the diced onion in 1 tbsp of oil, add the lentils, cumin, coriander, and pepper. Cook for 2 minutes. Set aside for filling.

Prepare the dough: mix flour and salt, make a well, add eggs and water, knead for 5 minutes. Let rest for 10 minutes covered.

Roll out the dough very thin between two sheets of parchment, cut into 8x8 cm squares, fill each with a spoonful of filling, fold into triangles or squares.

Cook the manti in boiling salted water for 8-10 minutes until they float to the surface. Cook for 2 more minutes.
