    Clean the leeks, cut them in half lengthwise, then into 5cm pieces. Blanch for 5 minutes in boiling salted water. Drain.

    Prepare the béchamel sauce: melt 40g butter, add flour and mix well. Gradually pour in the milk while stirring constantly to avoid lumps.
