    Prepare hummus: blend chickpeas, tahini, garlic, juice of 1 lemon and 2 tbsp olive oil. Season with salt and pepper.

    Prepare beet hummus: blend cooked beets with yogurt, lemon juice, garlic and cumin.

    Prepare tabbouleh: hydrate bulgur in cold water, then mix with diced tomatoes, parsley, mint, finely chopped red onion, lemon juice and olive oil.
