Persian lamb skewers marinated in Iranian spices and grilled to perfection. An authentic Iranian dish traditionally served with basmati rice and sumac.

Ingredients
- 700 g lamb (cubed)
- 350 g basmati rice
- 2 piece red onions
- 3 clove garlic
- 2 piece tomato
- 100 ml lemon juice
- 1 tbsp sumac
- 1 tsp ground cumin
- 1 tsp paprika
- 20 g fresh parsley
- 1 tsp dried mint
- 3 tbsp olive oil
- à volonté salt and pepper
Instructions
Step 1
Prepare the marinade: mix lemon juice, minced garlic, cumin, paprika, mint, olive oil, and salt.
Step 2
Marinate the lamb cubes for 15 minutes.
Step 3
Cook the basmati rice according to package directions.
Step 4
Cut onions into chunks and halve the tomatoes.
Step 5
Thread lamb, onion, and tomato alternately onto skewers.
Step 6
Grill for 10-12 minutes, turning regularly.
Step 7
Serve with basmati rice, garnished with sumac and fresh parsley.
