Kartoffelpuffer
Crispy German potato pancakes, served with a sour cream sauce. A comforting classic.

Ingredients
- 800 g potatoes
- 1 piece onion
- 2 pieces eggs
- 4 tbsp flour
- 250 g sour cream
- 200 g applesauce
- 400 ml sunflower oil
- 1 bunch fresh dill
- à goût g salt and pepper
- 1/4 tsp nutmeg
Instructions
Step 1
Peel the potatoes and grate them finely. Wrap in a kitchen towel and squeeze to remove excess water.
Step 2
Grate the onion finely and mix with the potatoes, eggs, flour, salt, pepper, and nutmeg.
Step 3
Heat the oil to 180°C in a deep skillet.
Step 4
Form pancakes with the mixture and fry for 3-4 minutes per side until golden and crispy.
Step 5
Drain on paper towels. Mix the sour cream with the chopped dill.
Step 6
Serve the kartoffelpuffer hot with the dill sour cream sauce and applesauce.
