Feijoada
Brazil's national stew made with black beans, assorted meats and spices, served with rice, orange and farofa.
Ingredients
- 400 g Dried black beans
- 350 g Pork shoulder
- 250 g Pork ribs
- 200 g Brazilian sausage
- 3 medium Onion
- 4 clove Garlic
- 2 medium Tomato
- 1 medium Red bell pepper
- 2 leaf Bay leaf
- 1 tsp Cumin
- 300 g White rice
- 1 fruit Orange
- 150 g Cassava flour
- 50 g Butter
Instructions
Step 1
Soak black beans in water for 12 hours or use rinsed canned beans.
Step 2
Cook beans with onion, garlic, bay leaf and water for 1.5 hours until tender.
Step 3
Meanwhile, cook pork in a Dutch oven with onion, garlic, tomato and bell pepper for 1 hour until tender.
Step 4
Add sliced sausages to the pork, cook for 10 minutes.
Step 5
Pour cooked beans with their broth into the Dutch oven, add cumin, salt and pepper.
Step 6
Simmer for 20 minutes to blend flavors.
Step 7
Meanwhile, cook rice according to package directions and prepare farofa by toasting cassava flour in butter with green onions.
Step 8
Serve hot feijoada with rice, farofa and orange slices.
