Soak dried chickpeas for 12 hours or use thawed frozen chickpeas (DO NOT use canned).
Finely chop onion, garlic, parsley, and cilantro.

In a food processor, blend cooked-mashed chickpeas, onion, garlic, and herbs until you get a granular paste.
