Cut the duck breast into 2 cm cubes, salt and pepper.

Finely mince the ginger and garlic. Chop the bell pepper and onion.

Toast the cashews dry in a wok for 2 minutes, set aside.

In the same wok, heat the oil and sear the duck for 5-6 minutes on all sides. Remove from wok.
