Senegalese fragrant rice cooked with smoked fish, assorted vegetables and spicy tomato sauce. Senegal's national dish, flavorful and hearty.

Ingredients
- 500 g Smoked fish
- 350 g Long grain rice
- 300 g Carrot
- 250 g Butternut squash
- 200 g Cabbage
- 200 g Sweet potato
- 400 g Tomato
- 2 piece Onion
- 4 clove Garlic
- 1 piece Chili pepper
- 2 tbsp Tomato paste
- 5 tbsp Peanut oil
- 700 ml Fish stock
- 1 tsp Salt
Instructions
Step 1
Cut the vegetables into large, regular cubes.
Step 2
Heat the oil and brown the smoked fish, then remove it.
Step 3
Sauté the onions, garlic and chili pepper, then add the tomato paste.
Step 4
Add the crushed tomatoes, stock and vegetables, cook for 15 minutes.
Step 5
Stir in the rice, return the fish, cover and cook for 20 minutes.
Step 6
Let rest for 5 minutes before serving.
