A rich Filipino sour broth with vegetables and pork, tangy from tamarind. A comforting stew with the country's signature flavor.

Ingredients
- 600 g Pork (ribs)
- 25 g Tamarind powder
- 1.5 l Water
- 2 unit Onions
- 4 clove Garlic
- 1 tbsp Fresh ginger
- 300 g White radish
- 250 g Butternut squash
- 150 g Spinach
- 1 unit Red chili
- 2 tbsp Fish sauce
- 1 tbsp Vegetable oil
- au goût unit Salt
Instructions
Step 1
Cut pork into chunks. Slice onions, garlic, and ginger. Prepare vegetables into pieces.
Step 2
Sauté onions, garlic, and ginger in oil for 2 minutes.
Step 3
Add pork and sear for 5 minutes.
Step 4
Pour in water and bring to a boil for 20 minutes.
Step 5
Add white radish and squash. Cook for 10 minutes.
Step 6
Add spinach and chili. Mix tamarind in 50ml water. Pour into pot.
Step 7
Add fish sauce and season. Simmer for 5 minutes.
Step 8
Serve hot.
