Rendang Daging
A rich and spicy Indonesian red curry where beef is slowly braised in an intense coconut-spice sauce until caramelized.

Ingredients
- 800 g Beef for braising
- 400 ml Coconut milk
- 4 tbsp Red chili paste
- 6 piece Shallots
- 4 clove Garlic
- 3 cm Fresh ginger
- 2 cm Galangal
- 2 stalk Lemongrass
- 1 tsp Turmeric
- 1 tsp Cumin
- 1 tbsp Cane sugar
- 1 tsp Salt
Instructions
Step 1
Cut the beef into regular 4cm cubes
Step 2
Prepare the rendang paste: blend shallots, garlic, ginger, galangal, and lemongrass
Step 3
Sauté the paste in a Dutch oven with a little oil for 3-4 minutes
Step 4
Add the red chili, turmeric, and cumin, cook for 1 minute
Step 5
Add the beef and mix well to coat with sauce
Step 6
Pour in the coconut milk and bring to a boil
Step 7
Reduce heat and simmer for 35-40 minutes until the meat is tender and the sauce is reduced and caramelized
Step 8
Adjust salt and sugar to taste at the end of cooking
