Osso Buco
An Italian braised lamb shanks dish cooked in white wine with vegetables, served with a bright gremolata of lemon, garlic, and parsley.

Ingredients
- 1200 g Lamb shanks
- 300 ml Dry white wine
- 2 piece Carrots
- 2 stalks Celery
- 1 piece Onions
- 400 g Crushed tomatoes
- 300 ml Meat broth
- 4 clove Garlic
- 1 piece Lemon
- 30 g Fresh parsley
- 3 sprig Fresh thyme
- 2 leaf Bay leaf
- 30 g Flour
- 40 ml Olive oil
Instructions
Step 1
Coat the lamb shanks in flour and shake off any excess.
Step 2
Sear the shanks in hot oil until well browned on all sides.
Step 3
Remove the shanks and brown the vegetables cut into mirepoix in the same pot.
Step 4
Return the shanks to the pot and deglaze with white wine.
Step 5
Add tomatoes, broth, thyme, bay leaf, and garlic.
Step 6
Cover and braise on low heat for 1.5 hours at 90°C.
Step 7
Prepare the gremolata by finely chopping lemon zest, parsley, and garlic together.
Step 8
Adjust seasoning and top with gremolata before serving.
