Delicious traditional Algerian cookie made with semolina, filled with date paste, and soaked in sweet syrup. A truly delightful melt-in-your-mouth treat.

Ingredients
- 300 g Fine semolina
- 200 g Pitted dates
- 100 g Melted butter
- 200 g Sugar
- 300 ml Water
- 3 tbsp Honey
- 1 tsp Ground cinnamon
- 4 piece Cloves
- 500 ml Oil for frying
Instructions
Step 1
Prepare the syrup by boiling water with sugar, honey, cinnamon, and cloves. Let cool.
Step 2
Blend the dates with some butter to form a smooth paste.
Step 3
Mix the semolina with the melted butter until it reaches a sandy texture.
Step 4
Shape the makroudh: flatten the semolina, add a spoonful of date paste, then seal.
Step 5
Fry the cookies at 170°C until golden brown.
Step 6
Immediately dip the hot makroudh into the cold syrup.
