Ajiaco Colombiano
A rich traditional Colombian soup featuring beef, mixed potatoes, and corn. Served with rice, sour cream, and fresh avocado slices.

Ingredients
- 700 g Beef brisket
- 400 g White potatoes
- 300 g Yellow potatoes
- 2 piece Corn on the cob
- 2 piece Onions
- 2 L Beef broth
- 200 ml Sour cream
- 2 piece Avocados
- 1 piece Lime
- 5 g Salt and pepper
Instructions
Step 1
Bring the broth to a boil and add the beef cut into large chunks.
Step 2
Simmer the beef for 15 minutes, then add the sliced onions.
Step 3
Cut the potatoes into cubes and the corn into sections, add to the broth.
Step 4
Cook for 20 minutes until the potatoes are tender.
Step 5
Season with salt and pepper.
Step 6
Serve in bowls with a drizzle of sour cream and fresh avocado slices.
