Pastéis de Nata
Crispy Portuguese custard tarts filled with creamy pastry cream and sprinkled with cinnamon. A typical and delicious dessert.
Ingredients
- 500 g Puff pastry
- 4 piece Egg yolks
- 250 ml Whole milk
- 80 g Sugar
- 30 g Flour
- 1 piece Cinnamon stick
- 1 tsp Vanilla
- 5 g Ground cinnamon
- 20 g Sanding sugar
- 20 g Butter
Instructions
Step 1
Prepare the pastry cream: heat the milk with the cinnamon stick. Whisk the egg yolks with sugar until pale.
Step 2
Mix the flour with a little cold milk, then add to the egg yolks. Gradually pour in the hot milk while whisking.
Step 3
Cook the cream over medium heat, stirring constantly until thickened (5 minutes). Add vanilla and butter. Let cool completely.
Step 4
Unroll the puff pastry. Cut it into regular squares. Roll each square around your finger to form a cylinder. Place in the wells of a muffin tin.
Step 5
Gently fill each well with pastry cream. Bake at 220°C for 20-25 minutes until the pastry is golden and crispy.
Step 6
Mix ground cinnamon and sanding sugar. Sprinkle over the hot pastéis fresh from the oven. Serve warm or cold.
