A roll of sweet rice wrapped in banana leaf with spiced lamb curry, a festive specialty from Sri Lanka.

Ingredients
- 600 g Lamb curry
- 300 g Basmati rice
- 4 piece Banana leaves
- 3 piece Red onions
- 4 clove Garlic
- 20 g Fresh ginger
- 2 piece Green chili peppers
- 2 tbsp Curry powder
- 1 tsp Turmeric
- 1 tsp Ground cumin
- 200 ml Coconut milk
- 2 tbsp Cane sugar
- 2 piece Farm eggs
- 3 tbsp Coconut oil
Instructions
Step 1
Cook the basmati rice, let it cool, then mix with beaten eggs and sugar.
Step 2
Make a lamb curry: sauté onion, garlic, and ginger in oil.
Step 3
Add curry powder, turmeric, cumin, then lamb cut into cubes.
Step 4
Add coconut milk and green chili peppers, simmer for 20 minutes.
Step 5
Lay out banana leaves, place rice mixture on top then lamb curry.
Step 6
Roll up the leaves, place in a buttered dish, and bake for 15 minutes at 180°C.
