Bobotie
A South African gratin of spiced ground beef with dried fruits and tomatoes, topped with a creamy egg layer.

Ingredients
- 800 g Ground beef
- 3 piece Onion
- 3 clove Garlic
- 2 tsp Curry powder
- 400 ml Crushed tomatoes
- 80 g Raisins
- 80 g Dried apricots
- 4 piece Egg
- 200 ml Whole milk
- 2 tbsp White wine vinegar
- 2 tbsp Olive oil
- 2 slice White bread
- 1 tsp Salt
- 0.5 tsp Black pepper
Instructions
Step 1
Preheat the oven to 180°C.
Step 2
Brown the ground beef with the onion and garlic in olive oil.
Step 3
Add the curry, crushed tomatoes, dried fruits, vinegar and bay leaves.
Step 4
Soak the bread in a little milk and add it to the meat. Simmer for 10 minutes.
Step 5
Pour the mixture into a baking dish.
Step 6
Mix the 4 eggs with the remaining milk and pour over the meat.
Step 7
Bake for 25 minutes until the egg layer is golden and set.
