Separate the egg whites from the yolks. Bring the milk to a boil with the vanilla pod split and scraped.

Whip the egg whites to stiff peaks with 100g of sugar until glossy.

Remove the vanilla from the milk. Using a spoon, gently drop the whipped egg whites into the simmering milk.

Poach the whites for 2-3 minutes per side until firm, then remove with a slotted spoon.
