Start the white rice in a pot of cold water (allow 15-20 minutes).
Cut the chicken into cubes, finely chop the onion, and slice the carrots into thin batons.

Heat the oil in a large skillet or wok. Sauté the onion and garlic for 2 minutes.

Add the chicken cubes and brown for 5 minutes.

Add the curry powder and mix well for 1 minute.

Pour in the coconut milk and add the carrots and broccoli florets.
Simmer for 10-12 minutes until the vegetables are tender. Season with salt and pepper.
