Cut the pork into pieces. Season with salt, cumin, oregano and garlic.

Confit the pork over low heat in oil with 10 cl of water for 90 minutes until very tender.

Prepare the tortilla dough: mix flour, salt and 12 cl of water. Knead for 5 minutes.
