Soak the saffron in 2 tbsp of hot water for 5 minutes.

Prepare the marinade: mix olive oil, lemon juice, soaked saffron, crushed garlic, cumin, coriander, salt and pepper.

Cut the fish into regular 4 cm cubes.

Marinate the fish for at least 10 minutes in the prepared mixture.

Thread the fish cubes onto skewers, alternating with onion pieces.
